2 cups all purpose flour
½ cup applesauce
2 tsp. baking powder
1 tsp. baking soda
½ cup wheat germ or flax seed
2 large eggs or 4 egg whites
2 large ripe bananas, mashed
1/3cup canola oil
1/3cup low fat milk
½ tsp. vanilla extract
2/3 cup diced walnuts
Directions:
1. Bake at 350ºF.
2. Spray loaf pan with Pam for Baking.
3. Mix together ingredients in large bowl.
4. Once ingredients are mixed, gently stir in walnuts.
5. Don’t overmix! Your goal is a smooth consistency; add a touch of low fat milk if needed.
6. Spoon batter into prepared loaf pan and bake until golden on top.
7. Cool 5 to 10 minutes.
